During this uncertain time, while many of us are staying home (or still needing to work outside the house like my husband, which makes me so nervous), I wanted to share this easy donut recipe with you. My hope is that you can bake some donuts with your kids and enjoy them together with your family. While my family is safe and my daughter is back home from college. I’m praying each day for everyone and if you are in need of extra prayer, please know that you can always reach out to me. Sometimes I feel lost and then there’s times where I feel like I got this. I worry the most about my parents in Mexico since they are 75+ years now and their resources are not that good.

I guess that’s why I’ve been baking more - I’m looking for things that provide a comforting feeling.

Instructions for Donuts:

Step 1: Preheat oven to 425 F. Spray Doughnut Pan with vegetable cooking spray. (Tip: Use a napkin to spread the spray around to prevent it from turning your doughnuts brown)

Step 2: In large bowl, sift together flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter. Beat until combined. Fill each pan cavity approximately 2/3 full using a piping bag. If you want, you can add food coloring to the mix so that you can bake colored doughnuts. You can make different colors and combine them when pouring the mix into the pan.

Step 3: Bake for 7-9 minutes or until the tops of the doughnuts spring back when touched. Let cool in pan for 4-5 minutes before removing. Doughnuts are best served fresh.

Instructions for Vanilla Glaze:

In small bowl, stir together confectioners' sugar, milk and vanilla extract until sugar is completely dissolved. Use immediately to glaze donuts.

PS: You can add sprinkles too, but do it right away after you dip them into the glaze.
